Unwind, relax, chill-out with a delicious Grapefruit Caprioska or Lemon Mojito. Fridays have never tasted so sweet.
- 1 red grapefruit, washed, dried, halved
- 3 tsp caster sugar
- Crushed ice, to serve
- 30ml (1 1/2 tbs) vodka
Cut half the grapefruit into 2cm pieces, removing the seeds. Squeeze the juice from the remaining grapefruit half into a jug (you will need 60ml / 1/4 cup juice). Place the grapefruit pieces and sugar in a mortar and pestle to pound until crushed. Pour the reserved juice into the jug. Add the vodka to the jug and stir until well combined. Chill the vodka mixture over ice and strain into a cocktail glass. Garnish with a slice of lemon and enjoy.
- 60g (1/4 cup) white sugar
- 12 sprigs fresh mint
- 1 lemon, thinly sliced
- 300ml fresh lemon juice
- 250ml (1 cup) rum
- 1 cup crushed ice
- Soda water, chilled, to serve
Add sugar and mint into a large jug. Use a fork to crush the mint into the sugar. Add in the lemon juice, crushed ice and rum. Let the mixture sit for 10min so the flavours infuse together. Strain the mixture into a cocktail glass and enjoy served with a slice of lime.
